The gift Alex and Jax find other the tree is more than cash for services. giveaway Chicken Mistletoe Ingredients: Sun dried tomatoes in oil (drained, reserving 2 T. oil) 2t. garlic 1-pound chicken tenderloins 1 cup half & half Parsley 1 cup shredded mozzarella Salt & pepper to taste Penne Pasta Whipping it up: In a large skillet, put in reserved oil, sun dried tomatoes and garlic. Cook for 1 minute. Take out tomatoes and chop into smaller pieces. Put chicken in pan and cook until brown on each side. In the meantime, start cooking pasta as directed on the box. Once chicken is brown, add in half & half, tomatoes, mozzarella, salt & pepper and cook on medium, stirring occasionally, until chicken is cooked through. It might seem too thick, but you’ll add pasta water soon. Once the pasta is tender, drain, reserving about 2 cups of the cooking water. Pour the reserved water into the pan with chicken. Stir well and cook for a few minutes. Then add pasta in with the chicken and stir. Sprinkle parsley on top. Enjoy! Rhonda thrives on making her readers happy.
